today was an easy, healthy day in the kitchen with yellow squash and cauliflower. it was nothing really special except it was super tasty.
i used cumin, coriander and fresh ginger to season the spring colored, happy squash and it came out deliciously. the spicy earth flavors married well with the sweet earthy flavors of squash and cauliflower.
yellow squash bakeabout a pound of yellow squash, chopped 1/4 cauliflower head, chopped 1/2 yellow onion, diced 1 tbsp olive oil 1 tsp freshly grated ginger 1 tsp coriander 1 tsp cumin pinch of salt squeeze of lemon combine squash through salt in a dish, cover with foil and bake in a 400 degree oven for about 20min (or until tender).
i just spooned the steaming veggies in a big bowl and scarfed ’em down. in my most lady like manner, of course.mellow & yellow, faith
