it is sunday funday and it was time for me to get creative. so i attempted my own recipe. concocted out of what i had in my fridge and a quick trip to the grocery store for eggs, i made muffins.
when i think muffins, i think sweet, but instead, i made husband and me a savory breakfast feast of sweet potato muffins, fried eggs and veggie sausage.
savory sweet potato muffinspreheat oven to 350F 2cups flour (i used whole wheat) just over 1/2 cup milk 2eggs 1/4 tsp salt 1 1/2tsp baking powder 3/4cup cooked, mashed sweet potato with sauteed onion and garlic mixed in 1tbsp fresh thyme mix all ingredients until combined. spoon lined or greased muffin pan about 3/4 full of muffin mix. place in oven for about 25min (or until tops are slightly browned and passes the tooth pick test).
with the first bite, i was taken aback… my first thought was, “but i’m biting into a muffin, it should be sweet.” but then, my taste buds took over and realized “oh, wow! this is really good!” paired with the fried eggs it was perfect, the butter taste of runny yolk and the garlicky sweet potato was a match made in culinary heaven.
next time i make them, i think i will spoon the batter into a greased muffin pan instead of using the liners so i can get crisper bottoms and edges.
