i had my first bites of meat for the first time in around 3 years just a couple of months ago. before that first bite, i had no meat cravings… i was great with plant proteins and soy products for my protein sources. but then, i started lifting weights and without the animal proteins, i was physically fatigued. my body needed meat. since that first meat bite, it was like pandora’s box opened and i was a carnivorous mess. one bite of meat and i wanted more, more, more. that said… the past couple of days (as i mentioned yesterday) my pallet has been more honed into vegetarian meals.
as it happens, it is “meatless monday” so it was another vegetarian meal in the home scratch kitchen.
last night, husband made a big pot of black beans, so i used those to make black bean burgers.
i wanted to try something new, so i incorporated the veggies in the burger. it turned out great!
black bean burgers1cup black beans, rinsed and drained 1/2cup brown rice handful of fresh cilantro heaping handful of spinach 2 green onions 1 egg combine all ingredients in a food processor or blender and pulse until smooth and combined shape bean mix into patties (i got 3 patties) and place on a cookie sheet sprayed with cooking spray (i used olive oil). place in a preheated broiler and cook each side for about 5min. i added a little longer time to the second side because i melted some queso fresco onto the patties.
the patties went into sprouted buns and topped with salsa. (i love sprouted bread, it is so filling and yummy). between the black beans, rice, cheese and sprouted bread, husband and i got a meal full of complete proteins. and it was delicious.cheers, faith
