fight night pizza night

i don’t know why, but i was feeling particularly generous and said “just order the fight” to my husband when he brought up that he wanted to see it really really really bad several times. so one pay-per-view ordered and one pie made makes for a pretty good night (i’m not what i would call a fan of UFC, but i’ll admit that it has been a nice evening home with my sublimely happy husband and another home scratch pizza).

tonights contenders, light weight mushrooms, middle weight prosciutto and, heavy weight garlic

it was a battle of the taste buds as husband and i devoured the pizza pie. the winner? i have to say pizza. the flavors packed a punch that made our mouths salivate and our will powers weak; between the two of us, we ate the whole thing. (i’m glad i spent another hour sweating at the gym…)

for the pizza:

12inch pizza dough (i made my own, but you could use store bought in a pinch)
1 portabella mushroom cap sauteed in olive oil
1 cup assorted mushrooms (take your pick); i used shiitake/oyster mix also sauteed in olive oil
3 garlic cloves, minced and covered in 2 tablespoons of olive oil
1/2 cup feta cheese, crumbled
prosciutto
oregano
freshly ground pepper
preheat oven to 500 degrees
preheat pizza stone on lowest rack of oven for 30 min
meanwhile, toss dough and let rest for 30 min (while stone preheats) on pizza peel
add garlic/olive oil, spreading to about 1 inch from crust
add mushrooms, prosciutto, feta, oregano
bake for about 5 min or until cheese is gloriously melted and crust is browned. pull out of oven, drizzle olive oil, sprinkle black pepper over the top and let rest for about 5min before slicing.
there is no need to fight about it; it’s a winning pizza

fight or no fight, it is a great pizza.
