cheese & chocolate

it was sunday fun day in the home scratch cookin’ kitchen. the purpose of fun day is to celebrate with new, to make make something i have never made before or use an ingredient i have never used.

today i tackled halloumi. i have had halloumi at a restaurant before, but i have never made it myself. combine that it is cheese and you can grill the cheese, i’ve been looking forward to fun day all week.

i decided the best way to showcase the cheese would be an antipasto style plate.

the plate included grilled halloumi (seriously, can there be anything better than cheese that you can grill??), dates, grilled asparagus, roasted red pepper, black peppered crackers, and balsamic caramelized  onions. i had two favorite combos; the cheese and the dates and the cheese and the onions. each offered a satisfying combination of salty and sweet.

for the cheese

pre-heat cast iron grill pan at medium heat
6 quarter inch slices of haloumi
arrange each slice on grill and cook each side for about 3min

for the onions

one hole yellow onion, thinly sliced in rounds
about 2 tablespoons EVOO
pinch of sea salt
1/4 cup balsamic vinegar
in a large skillet, heat olive oil over medium heat, add sliced onions and salt
cook until onions brown add vinegar and cook until reduced

for dessert i made chocolate souffles. light, decadent and chocolate.

    Something to add to the list. I wonder if halloumi can be smoked, too. Any kind of cooked cheese is a win in my book. Thank’s for sharing!

    I’m going to ignore that cheese bit (;)) and just say those souffles look scrumptious!
