butternut squash is not my only obsession. i love other things… like grill marks. on everything grillable. those beautiful parallel lines of charred beauty. maybe it is because i am from texas and i of course have a soft spot for bbq. or maybe because i love the sharp contrast between the char and the unbranded. or maybe it is just because it is pretty.
for dinner i made a lovely panini oozing with fresh mozzarella cheese, just made cilantro pesto, sliced turkey and sun dried tomato. served perfectly with lovely little grill marks like beaconing little runways for our taste buds to land, taste and savor.
cilantro pesto:approximately 2 handfuls of fresh cilantro (about 1.5 loose cups) 1/4-ish cup of EVOO small handful fresh parmesan small handful pine nut 3 crushed garlic cloves pinch of sea salt combine all ingredients in food processor and blend until smooth
for dessert i continued with the grill mark theme and grilled halved, cored and de-stemmed pears served along side dark chocolate drizzled with olive oil and dusted with sea salt.
and because i feel like chocolate is completely deserving of its own showcase…blissfully, faith
